【粉絲蒸青蠔】
    Steamed Mussel With Glass Noodle


做法

1.   先把蝦米用攪拌機搗碎,取出備用。

2.   鑊裡燒熱2大匙油,以慢火炒香蒜茸、朝天椒末及蝦米碎,加入調味料兜炒均勻至香濃,加入豆豉略炒一下,盛起。

3    青蠔洗淨後瀝水,排在蒸盤上,青蠔上加入適量蝦米料,盛入預熱蒸爐,上蓋以大火蒸10分鐘,取出,即可上桌食用。
 

Method

1.   Finely blend the dried shrimps in the blender, remove and keep aside.

2.   Heat up 2 tbsp oil in the preheated wok, sautŽ chopped garlic, bird's eye chillies and blended dried shrimps over a low heat until fragrant.
       Add in seasoning, stir-fry briskly until aromatic, add fermented salted black beans, toss well. Remove from heat.

3.   Rinse the mussels and drain well. Arrange on a heatproof plate, spoon some dried shrimps mixture onto each mussels. Steam in the
       preheated steamer over high heat for 10 minutes. Dish out, serve at once.
